Cheesecake baked in an Oreo crust and with cream cheese filling. This smooth and creamy cake is a delightful dessert for any occasion !
INGREDIENTS
CRUST
12 Oreo cookies (1 packet)
3 Tablespoons butter at room temperature
CHEESECAKE
2 tub cream cheese (180g X 2)
2 eggs
1 teaspoon vanilla extract
12 Oreo cookies broken into chunks
1/2 cup powdered sugar
INSTRUCTIONS
To make the crust :
Line a cake tin with parchment paper. Place Oreo cookies in a food processor until they are small crumbs. Put in the butter into the food processor and beat until butter is mixed well with the crumbs.
Take the mixture out and press this into the cake tin covering the bottom. Ensure the crumbs are spread evenly and covers the base of the cake tin well.
Refrigerate this while you make the cheesecake.
To make the cheesecake :
Preheat the oven to 160 degree Celsius.
In a medium mixing bowl, add the cream cheese and beat with hand mixer until fluffy.
Add the eggs, one at a time, beating well after each addition and scraping bowl occasionally. Add vanilla and sugar and mix well and again ensure to scrap the bowl.
Fold in the Oreo chunks with a hand spatula . Do not beat beat them else the cookies will crumble into the dough.
Pour batter into Oreo pie shell and bake for 40 minutes or until cake center is slightly firm. You can use a toothpick to test the doneness.
Remove from oven and cool completely. Refrigerate for atleast 1 to 2 hours or until ready to slice and serve.
Tip : You can use chocolate ganache on top for flavour by mixing butter and heavy cream heated on stove, pour the hot mixture over a cup of chocolate chips and add in 1/2 cup powdered sugar. Whisk this well and pour over the cheesecake once cooled. put it back in the fridge for the ganache to set.
