Cookies that are studded with loads of pistachios and warming cardamom flavour. A crunchy treat that is perfect with a pot of coffee or tea.
INGREDIENTS
1 cup unsalted butter at room temperature
1 cup powdered sugar
2 cups all-purpose flour
1/2 teaspoon salt
1/2 teaspoon cardamom powder
2 teaspoons vanilla extract
5 tablespoons milk
1/2 cup pistachios, chopped
INSTRUCTIONS
Whisk flour, salt, cardamom and set aside.
In a bowl of a stand mixer or with a hand mixer, whisk butter until fluffy. Then, add the sugar and whisk together until creamy. Next add vanilla and milk.
Now add the dry ingredients. Whisk on low speed.
Add the chopped pistachios and mix.
Turn out dough onto a clean work surface. Divide in half.
Roll each dough into 2 logs about 1 1/2" in diameter. Wrap in plastic wrap making sure to cover ends completely. Refrigerate for at least 2 hours or overnight.
Preheat oven to 180 degree C and prepare a baking tray with parchment paper.
Use a sharp knife cut out rounds. Make sure they are not too thick.
Bake for 20 minutes or until the edges have browned. Do not over bake them. Allow it to cool and firm up before removing them from the baking sheet.
