POMEGRANATE CUSTARD POPSICLE

A creamy frozen treat with the goodness of real pomegranate seeds



INGREDIENTS


2¼ cups full cream milk

¼ cup sugar

2 tablespoon custard powder

¼ cup thick whipping cream or fresh cream

Some pomegranate seeds


INSTRUCTIONS


Dissolve the custard powder in 1/4 cup milk and set aide. This should be lump free.


Boil the remaining milk in a saucepan and add in sugar and stir well.

Add the custard mixture to this milk and stir well to get lump free custard milk while on low flame.


Ensure to stir continuously and until milk thickens well. Set aside to cool.


In a mixing bowl, take the cream and beat well with a whisk or hand blender till stiff peaks appear. Now add in the cooled custard milk. Mix well making sure the milk and whipped cream is well combined. Beat this well with a whisk or hand blender for a minute.


Now add in the pomegranate seeds and mix well. Transfer this into popsicle moulds and freeze for 8 hours or till it sets completely.


To remove, dip the popsicle in hot water for 10 seconds. Enjoy !
