ROCKY ROAD COOKIES

Irresistible cookies loaded with marshmallows, nuts, and chocolate chips. These are soft, chewy and dream cookies for Rocky Road lovers !


INGREDIENTS


1 and 1/2 cups all-purpose flour

1/4 cup unsweetened cocoa powder

1/2 teaspoon baking soda

1/2 teaspoon salt

1/2 cup unsalted butter, softened at room temperature

1/2 cup sugar

1/2 cup brown sugar

1 egg

1 teaspoon vanilla extract

1/2 cup sliced almonds, broken into smaller pieces + some extra for topping

1/2 cup semi-sweet chocolate chips + some extra for topping

1 cup mini marshmallows


INSTRUCTIONS

Preheat the oven to 180 degree C. Prepare a baking tray with parchment paper.


In a mixing bowl, combine the flour, cocoa powder, baking soda, salt and 1/2 cup chocolate chips.


In another mixing bowl cream the butter, brown sugar, and granulated sugar together with a mixer.


Next add in the egg and vanilla extract, mix again on low. Gently add in the dry ingredients and sliced almonds, mixing on low until combined.



Using a cookie scoop or spoon , scoop equal-sized balls onto the baking tray. Press 3-4 mini marshmallows into each cookie and add additional almond pieces and chocolate chips to the outside of the dough balls.



Place the cookies 3 inches apart and bake for approx 10 minutes. Allow the cookies to cool on the sheet for 10 minutes before moving to a cooling rack. Enjoy !
