SNOWBALL COOKIES

Delicious, rich, buttery, and slightly crumbly handmade cookies. For the holidays, these Snowball Cookies are the ideal simple treat!


INGREDIENTS


1/3 cup butter , at room temperature , softened

2/3 cup icing sugar

1 teaspoon vanilla extract

2 cups almond flour

1 tablespoon warm milk

3/4 cup walnuts, finely chopped

2 tablespoon icing sugar for coating

INSTRUCTIONS


Preheat oven to 170 degrees C and line a baking tray with parchment paper.


In a mixing bowl, whisk together butter and icing sugar. Beat with an hand mixer or in a stand mixer until smooth and combined. Next add the vanilla extract and beat just until incorporated.


Tp the mixing bowl, add almond flour and warm milk. Mix this mix by hand, until a cohesive dough forms. Lastly, add the chopped walnuts and stir until combined.


Scoop 1 tablespoon of dough, roll this into a ball and place it on the baking tray. Repeat with remaining dough.


Bake for about 12 minutes and remove from the oven. Cool the cookies for about 5 minutes.


While the snowball cookies are still warm, roll each one in two tablespoons of icing sugar in a small bowl.


After being coated, return the cookies to the cooling rack to continue cooling.
