Buttery sugar cookies with a candy center that gives a beautiful stained glass effect and making these cookies the showstopper of all of your Christmas baking.
And you can even decorate your tree with them!
INGREDIENTS
1 cup unsalted butter, softened
1 cup powdered sugar
1/4 tsp salt
2 eggs
1 teaspoon vanilla essence
3 cups all-purpose flour, plus more for dusting
Any coloured hard candies - approx. 8 numbers ( I used Fox's fruits flavoured candy )
INSTRUCTIONS
Beat the butter and sugar until smooth using a hand held or stand mixer. Add the eggs one at a time, beating well after each addition.
Now add the vanilla extract and salt. Next mix in the flour until thoroughly combined and whisk slowly.
Remove the dough from the bowl. Place the dough on a large piece of plastic wrap and wrap around the dough and chill for at least 1 to 2 hours.
Preheat the oven to 180 degrees C. Line a baking tray with parchment paper or a nonstick baking mat.
Note : Use a good quality baking paper else the candy can stick to them.
Place one colour of each candy in a sealed bags and crush them using a hammer into powder. Do it for each coloured candy separately.
Divide the dough in half and place one half of the dough back in the fridge.
Roll the half of the dough into a rectangle about 4 inches thick . Using a star-shaped cookie cutter, cut out as many shapes as you can from the dough. Place the stars 1 inch apart on the baking tray and use a circle or smaller star-shaped cookie cutter to cut out your windows.
Re-roll the remaining pieces of the dough and repeat the process until you've filled your first baking sheet.
Fill each cookie 3/4 of the way with crushed candy. Bake for 10-12 minutes or until cookies are light golden brown and the candy has melted. Cool completely.
Repeat the same process with the other half of the dough that you previously put in the refrigerator.
