Moist chocolate cake that is easy to prepare. Frost with your favourite chocolate frosting.
INGREDIENTS
1 1/2 cups flour/maida
1 1/2 cups white powdered sugar ( Powder normal sugar and sieve it)
1/2 cup unsweetened cocoa powder (I use Hershey's brand)
1 1/2 teaspoons baking powder
1/2 teaspoon salt
1/3 cup unsalted butter (or you can use oil)
1 egg
2 teaspoons vanilla extract
3/4 cup milk
3/4 cup boiling water mixed with 2 teaspoons instant coffee powder
INSTRUCTIONS
Preheat oven to 180C . Lightly grease a round cake pan and and line with parchment paper.
Combine flour, sugar, cocoa powder, baking powder, soda and salt in a large bowl. Whisk thoroughly to combine well. Add butter / oil, eggs, vanilla and milk to the flour mixture and beat well to combine. Pour in the boiling water (with the coffee), and mix until glossy. This batter consistency will be thin. Pour the cake batter into the prepared pan. Bake for about 50 minutes or until a toothpick inserted in the centre of the chocolate cake comes out clean. Remove from oven and allow to cool for 20 minutes. Transfer cake from the pan to a wire rack and cool completely before frosting. Frost with chocolate buttercream.
