TWIX COOKIES

The combination of delicious gooey caramel, smooth silky chocolate and a light soft sugar cookie crust is a hard to resist combination !



INGREDIENTS


Cookie base

1/2 cup butter, softened at room temperature

1/2 cup powdered sugar

1 teaspoon vanilla extract

1 egg white

1 and 1/2 cups all purpose flour

1 teaspoon baking powder


Chocolate caramel topping

1/2 cup powdered sugar

3 Tablespoons unsalted butter

1/4 cup fresh cream

1/2 teaspoon salt

2 cups grated milk chocolate



INSTRUCTIONS


Preheat oven to 180 degree C and prepare two baking trays using parchment paper.


For the cookie base, in a mixing bowl, cream together the butter and sugar. Next add in the egg white and vanilla essence. Whisk this well using a hand mixer or stand mixer.


Add the flour and baking powder. Mix thoroughly.


Place this on a flat surface and roll the dough out until it is 1/4 to 1/2 inch thick. Use a round cookie cutter and cut out circles. Transfer this to the prepared tray or pan.


Bake this for about 10 minutes and transfer to a rack to cool completely. Repeat the process with the remaining dough.


For the caramel sauce, heat sugar in a saucepan over low heat, stirring constantly with a spatula or wooden spoon till it has melted into a thick brown liquid. Once sugar is completely melted, immediately add the butter.


Stir the butter into the caramel until it is completely melted into a light caramel color. Very slowly pour in cream while stirring and boil for a minute.


Remove from heat and stir in salt. Allow to slightly cool down and place a spoonful of caramel onto each cooled cookie, using the back of the spoon to spread it to the edges of the cookie.


Let the cookies sit until caramel has firmed up, for about 5 minutes in fridge .


Now take the grated milk chocolate and into a bowl and microwave in 30 second increments until chocolate is melted. Stir until smooth.


Place a spoonful of melted chocolate onto each cookie and spread it over the caramel layer.


Let the cookies sit until the chocolate has hardened. Enjoy !
