WHOLE WHEAT CHOCOLATE BANANA MUFFINS

Super moist, fudgy banana muffins bursting with chocolate flavor made with whole-wheat flour and honey. A healthy delicious treat free of refined sugar.



INGREDIENTS


1 cup whole wheat flour

1/2 cup unsweetened cocoa powder

1 teaspoon baking powder

1 teaspoon baking soda

1/2 teaspoon salt

5 small very ripe bananas

1/3 cup organic honey

1/4 cup olive oil (alternatively you can use melted butter or any vegetable oil)

1 egg

1 teaspoon vanilla extract

1 cup chocolate chips



INSTRUCTIONS


Preheat oven to 220°C. Grease or spray a muffin pan with butter or nonstick spray or use cupcake liners.


Sieve flour, cocoa powder, baking powder, baking soda, and salt and combine. Keep aside.


In a mixing bowl, mash bananas with hand held mixer. Next whisk in the honey. egg, oil or melted butter , and vanilla extract until combined. Put in the dry ingredients and whisk until everything is combined. Fold in the 3/4 cup chocolate chips.


Spoon the batter into muffin tray or liners, filling them all the way to the top. Sprinkle each with some of the remaining chocolate chips.


Bake the muffins for 5 minutes at 220°C and reduce the oven temperature to 180°C. Bake for 13 minutes or until a toothpick inserted in the center comes out clean.


Cool on a wire rack until ready to eat.
