WHOLE WHEAT CHOCOLATE GLAZED ALMOND DOUGHNUT

Healthy and homemade doughnuts made with whole wheat flour topped with a rich chocolate glaze and almond bits

INGREDIENTS

560 grams whole wheat flour

1 teaspoon salt

1 egg

1/4 cup sugar

1 cup lukewarm water

2 teaspoon active dry yeast

1 1/2 teaspoon vanilla extract

1 cup coconut oil, melted

Orange zest of half an orange

Chopped milk chocolate pieces

Chopped almond

INSTRUCTIONS

Whisk together whole wheat flour and salt. Set aside.

Place yeast, lukewarm water, and 1 teaspoon sugar in a small bowl. Set aside until foamy.

Beat egg, the rest of the sugar, vanilla extract and orange zest into the yeast mixture.

Add the flour mixture and then the coconut oil, mix with either a stand mixer or hand mixer until it starts to come together.

Flour a work surface and knead until dough is smooth, soft, about 8-10 minutes (add more flour if necessary). Place the dough in a lightly oiled bowl and cover with plastic wrap. Set in a warm place to rise until doubled, about 1 and a 1/2 hours. Roll dough to 1/2 cm thickness and then cut out doughnut rounds. Cover with plastic wrap and let it rise for 30 minutes.

Fry these in oil and set aside to cool.

Melt chopped chocolate in a double boiler until smooth and dip the doughnuts in them. Decorate with almond bites and allow the chocolate to set.
