Tiny pizzas that are healthy, light and crunchy and a family dinner or snack recipe that would keep kids and adults wanting more !
INGREDIENTS
Homemade 100% whole wheat pizza dough ( make it from here - https://www.rupzbaking.com/post/100-whole-wheat-pizza-dough )
1 tablespoon sunflower oil
2 boneless chicken breasts (shredded)
1 teaspoon ginger paste
1 teaspoon garlic paste
2 tomatoes (chopped and blended) for the chicken
1/4 teaspoon chili powder
Pizza toppings:
Pizza sauce ( Homemade or store bought)
1 small tomato, diced
1 small onion, diced
Washed and dried coriander leaves
Washed and dried celery leaves ( this is optional)
One teaspoon pepper
One teaspoon salt
Grated Pizza cheese or mozzarella cheese
Grated Parmesan or cheddar cheese or cheese blocks
INSTRUCTIONS
Heat the oil on a medium heat in a frying pan. Add the shredded chicken and fry for 8 to 10 minutes. Tip in the ginger, garlic and mix for a couple of minutes. Stir in the tomatoes and mix in the chili powder. Set this aside.
Preheat oven to 220 degrees C and prepare a baking tray with parchment paper.
Take the pizza toppings - diced onion, diced tomato, coriander leaves, celery leaves, salt and pepper in a bowl.
Place pizza dough on a well-floured surface and press firmly with your fingers or using a rolling pin to shape and stretch gently into a 12” x 8” rectangle. With a round cutter, cut dough into circles and place them apart on the baking tray.
Top each with pizza sauce, chicken mixture, pizza toppings and cheese. Bake mini pizzas for 10 minutes and serve immediately.
