WHOLE WHEAT STRAWBERRY LOAF CAKE

Delicious texture packed soft and sweet strawberry banana bread that is incredibly moist. A great breakfast, snack, or even dessert!


INGREDIENTS

2 cups whole-wheat flour, sifted

1 teaspoon lemon zest

2 teaspoons baking powder

3/4 cup butter, softened

1 cup sugar

2 teaspoons vanilla extract

3 eggs

1/2 cup milk

1 cup strawberries sliced

Strawberries to decorate




INSTRUCTIONS

Pre-heat the oven to 180*C and line a loaf pan with parchment paper.


In a bowl, whisk and combine flour, baking powder and lemon zest.

In a mixing bowl, cream butter and sugar until the mixture is light and fluffy with a hand mixer or a stand mixer.


Next add in the vanilla extract and the eggs, one at a time and mix well after each addition. Mix in the milk to the batter next.


Add in the dry ingredients into wet ingredients slowly mixing and do not over mix the batter. Carefully fold in the fresh strawberries.


Pour the batter into the prepared pan and decorate with strawberries, optional. Bake at 180*C for 50 minutes or until a skewer inserted into the center comes out clean.
